Comment: Moving operations from Guatemala to Trinidad in recent years (and enduring the obvious supply issues associated,) Zaya now seems to be back online and producing this fine aged and blended rum with surprisingly few hitches.
Distiller: Zaya Rum Company, Trinidad
Age: 12 years
Proof: 40% ABV, 80 Proof
Notes: This is a blended rum aged in Solera Sherry casks. An excellent accompaniment to a pipe of Cavendish tobacco or a demitasse of Espresso, we feel it’s depth of rounded notes would pair well with moderate to high tannins. We suggest enjoying it alone in a sherry glass, at room temperature, to guide the vapors to the nose appropriately.
Color: Sable
Nose: Toasted vanilla, Turbinado sugar with backnotes of spice and the tickle of alcohol.
Taste: Good alcohol prevalence with muted characteristics of cocoa, vanilla and nutmeg.
Finish: Moderate length, drinking clean for rums of this class. Not cloying in sweetness, yet playfull in it’s expression of the sugar and spice associated with aged rums.
