WhistlePig built its reputation by making rye whiskey impossible to ignore. Now, as America approaches its 250th anniversary, the Vermont whiskey maker tells BourbonBlog.com they are giving wheat its own moment in the spotlight.

The new WhistlePig Declaration Wheat Whiskey is a limited-edition American whiskey built around a 93% wheat mashbill, double American oak aging and a patriotic presentation intended to mark the country’s semiquincentennial celebration.

At 86 proof, Declaration Wheat Whiskey is deliberately softer and more approachable, offering a lighter path into WhistlePig’s portfolio while still retaining the barrel influence and flavor concentration expected from the brand.

A New Direction for WhistlePig Whiskey

Declaration Wheat Whiskey is made and aged in the United States from American grain. WhistlePig says the whiskey is double aged in American oak, with a second finish in wave-stave barrels designed to deepen its toasted character and add further complexity.

That secondary barrel treatment matters. Wheat whiskey is often prized for a naturally softer, rounded profile, but WhistlePig is using additional oak contact to create more texture and richness without turning the whiskey into an overly heavy summer pour.

The result is meant to offer a different side of American whiskey: gentle enough for easy sipping, but structured enough for a proper neat pour or cocktail.

The nose opens with raspberry and vanilla gelato, then shifts toward orange crème, toasted honey-wheat bread and soft oak.

The palate brings sweet cinnamon bread, candied citrus, caramelized sugar and a little brûléed sweetness, before settling into gentle charred oak and a honeyed finish.

We recommend it for its notably layered profile with more depth and movement than many wheat whiskeys.

Built for Summer Sipping

The high wheat mashbill should bring softness and sweetness, while the double American oak aging gives the bottle enough char, toast and spice to avoid becoming one-dimensional.

For drinkers accustomed to bourbon, the familiar notes of vanilla, caramelized sugar and charred oak may make Declaration an easy entry point. For rye fans, the appeal may be the contrast: less pepper and herbal spice, with more breadiness, citrus and warm baking flavors.

WhistlePig has also positioned the bottle for highballs. Its suggested Apple Highball combines Declaration Wheat Whiskey with sparkling apple cider, club soda and bitters, creating a bright, easygoing serve that fits the summer launch window.

A Cracked Liberty Bell Topper for America’s 250th

The bottle’s visual centerpiece is a cracked Liberty Bell topper, a direct nod to American independence and the Fourth of July season.

That detail gives Declaration more than a patriotic label. It places the whiskey within the wider story WhistlePig is telling this year: a celebration of American grain, American craftsmanship and the country’s 250th birthday.
