Bardstown Bourbon Company tells BourbonBlog.com they are launching a $139.99 Kentucky-exclusive whiskey finished for 27 months in pineapple rum casks—and fewer than 350 nine-liter cases will be released.
The new Victoria Pineapple Barrel Finish Whiskey will arrive Friday, July 24, 2026, at the Bardstown Bourbon Company distillery, its Louisville Tasting Room and select Kentucky retailers.
Bottled at 106 proof, the limited release combines mature bourbon and rye with an unusual finishing process inspired by one of the Caribbean’s most distinctive rum-making traditions.

Mature Bourbon and Rye Meet Pineapple Rum Casks
Victoria Pineapple Barrel Finish begins with a custom blend of 10- and 11-year-old bourbons and 11-year-old rye whiskey.
Bardstown Bourbon Company placed that blend into Caribbean-sourced casks that previously held rum made using Victoria pineapples. The whiskey was then allowed to mature in the casks for an unusually long 27 months.
The Victoria pineapple is prized for its concentrated sweetness and fragrant aroma, along with its historical connection to premium rum production in Barbados.
Rather than simply using the empty rum barrels as finishing vessels, Bardstown Bourbon Company sought to recreate part of the process that had originally given the rum—and its casks—their tropical character.
Fresh pineapple was added to the barrels during maturation, mirroring the technique used to create the original rum.
“The goal was never to make whiskey taste like pineapple,” said Dan Callaway, Master Blender for Lofted Spirits. “The goal was to understand what made these barrels so special in the first place. We followed that trail all the way back to the creation process and found our way to a whiskey with a bold, tropical fruit, surrounded by rye and allspice.”
What Does Victoria Pineapple Barrel Finish Taste Like?
According to Bardstown Bourbon Company, the whiskey opens with aromas of bold tropical fruit, rye spice and allspice.
The palate brings together pineapple, cherry and toasted oak before developing additional notes of vanilla crème and toffee.
Despite the experimental maturation process, Bardstown Bourbon Company emphasizes that the finished product remains grounded in the structure and complexity of mature American whiskey rather than becoming a pineapple-flavored spirit.
Finishing staves were also used to help integrate the tropical character with the older bourbon and rye.
“Finishing with staves gave us the balance that helped integrate the pineapple character without losing the depth and complexity of the whiskey itself,” Callaway said.
The combination of highly aged whiskey, rum-seasoned barrels, fresh fruit and a 27-month finishing period makes this one of Bardstown Bourbon Company’s more adventurous whiskey projects to date.
A New Finishing Series Begins
Victoria Pineapple Barrel Finish Whiskey is also the inaugural release in Bardstown Bourbon Company’s new Finishing Series.
The series represents an evolution of the company’s sought-after limited-edition collaborations and will explore creative approaches to maturation, blending and barrel finishing.
Each Finishing Series release will feature custom label artwork inspired by the whiskey inside the bottle. Louisville artist Margaret Archambault created the original artwork for the Victoria Pineapple release, translating its tropical flavor profile into the bottle’s visual design.
Her work will also appear on Bardstown Bourbon Company’s national Discovery and Finishing releases scheduled for later in summer 2026.
Only fewer than 350 nine-liter cases of Victoria Pineapple Barrel Finish Whiskey will be available. The bottle will be sold exclusively in Kentucky beginning July 24, 2026, including at the Bardstown Bourbon Company distillery and Louisville Tasting Room.
The suggested retail price is $139.99 per 750-milliliter bottle.
